Tom and I did some research on Berti Knives and he ordered a small Chef Knife for me!!! Yeah!  Berti has a really great idea for wood blocks.   Magnetize them and each knife has it’s own dedicated block!  They stock together with a little silhouette of what knife goes in which block!  We had to get one for our new friend.  We’ll have to think of a name for it to give it some personality.   I’ve never spent this much on a knife, but going to Le Cordon Bleu. I’ll be using my knives a LOT so we wanted to have very high quality tools.

Onion Soup

President Miele saw several constituents in his office today. It was the first time I could use a broiler in six years! It surprised me how quickly the President works! The toast for the soup was in the President’s office a bit too long. I’ll check it sooner in the future now that I know how efficient the President is! I should have added a bit more cheese to keep the soup a bit happier!

The President conferenced with the Tomatoes and Zucchini gratin. The office was perfectly heated at 190 degrees Celsius!

Merlin loved the cooked onions! He eats almost everything we do. It can be dangerous to have him eat near you as small pieces of onion are flying everywhere when he shakes his head. Don’t sit too close if you have something nice on!

Dessert: Home made Orange Sorbet

Today I inaugurated the Italian Vice President: Mr. Il Gelato. The Vice President was elected with the President as a package deal. The VP had his first day of work. Just like in real life, the VP doesn’t work as hard as the President. He has more days off. But today, he had to do something to earn his pay.

We offered the VP many oranges, a lemon, some orange peel and a few other trinkets which he gladly accepted. He quickly got to work and produced his magic. Orange Sorbet to please us, his constituents! I think we’ll vote for the President and his party again in the future!

Chocolate Curls!

Today I made my first chocolate curls. I have never worked with chocolate so it’s new territory for me. I realized it would have been nice to have a straight knife. My Chef Knife is tapered to the point, so to make the curls look nice when I was scraping the chocolate, I had to keep rotating my knife. The chocolate ended up in conic curl shapes. They looked like thin hollow chocolate tubes with pointy ends. As you can see from the picture, they looked great!

To assemble the dessert, I started with Raspberry Coulis which were frozen raspberries. I mixed it with powdered sugar and a bit of Kirsch (a cherry liquor). I bought a nice little mint plant from the grocery store. It sacrificed a few leaves to enhance the dessert flavor. The orange sorbet was on the Raspberry Coulis, with the chocolate and mint. It was a good combination and everyone enjoyed it! That makes me feel great and is the purpose of cooking. To see the satisfaction and enjoyment from those partaking of your creative works.

The more I cook, the more I see it’s true. Cooking really is an art. There’s still so much to learn each day. It’s a lifelong pursuit and I enjoy it! ;)

The weather was MUCH better today. 8.5C (in the 40sF) which felt like Winter is about over. I can’t wait for Spring!

Hi Amanda! It was really yummy but Gaby said it will be better the next time! She really loves the new oven. It’s like going from driving a Chevy Chevette to a Porsche 911.
